Quick Salmon and Mango Tacos

Ingredients

  • 2 x medium salmon fillets, skin on or off as preferred

  • 6 x small tortilla

  • Salsa
  • 1 large mango, diced

  • 1 large tomato, diced

  • 1 large avocado, diced

  • 1/2 cup coriander, roughly chopped

  • Juice of 1/2 lime

  • Pinch of black pepper

  • Pinch of chilli flakes

Method

  • Preheat your oven to 220C.
  • Line a tray with foil and add a drizzle of oil, put salmon (skin down if using) on the tray and season with salt and pepper.
  • Add salmon to the oven, bake for 15-20 minutes until cooked through or still slightly pink in the middle.
  • Add all salsa ingredients to a bowl and combine.
  • Add salmon and salsa to tortillas.
  • Use a drizzle of your preferred sauce – we like a Nando’s perinaise, or chipotle garlic aioli.
