Chunky Pulse Pasta

Ingredients

  • 200g pulse pasta (uncooked)

  • 1 tbsp olive oil

  • ½ cup mushrooms, quartered

  • 1 small zucchini, diced

  • 1 small red capsicum, diced

  • 1 clove garlic

  • 1 small brown onion, diced

  • 500g chicken breast, diced

  • Parmesan cheese to serve

Method

  • Cook the pasta according to packet directions.
  • Meanwhile, heat a fry pan over medium heat and add the oil to the pan. Add the onion and garlic and fry for a few minutes until the onion starts to soften.
  • Add the chicken and cook for 6 minutes until the chicken is golden and cooked through – make sure all the juice has evaporated and the chicken has started to fry!
  • Add the vegetables and cook for a few minutes until the vegetables are soft enough for your bub to eat.
  • Serve the pasta with the chicken and vegetables and top with Parmesan cheese.
