Homemade Chicken Schnitzel

500g chicken breast, thigh or tenderloin
2 cups plain flour
2 eggs
¼ cup milk
2 cups breadcrumbs
¼ cup vegetable oil
Method
- Preheat the oven to about 200 degrees Celsius. Line a baking tray with baking paper.
- Cut the chicken into your preferred size pieces, cover them with kitchen paper and then tenderise (bang them!) with a rolling pin or your fist, aiming to make then the same thickness all over.
- Place the flour and breadcrumbs each onto a separate plate and whisk the eggs and milk together in a bowl.
- Take each piece of chicken and cover it with flour, then the egg mix and finally, the breadcrumbs. Lay each finished piece onto a plate.
- Heat the oil in a large fry pan on medium/high heat. Cook a few pieces of chicken at a time (allowing some room between them) for a few minutes each side. You are aiming for them to be golden brown but they don’t need to be cooked through.
- Transfer to the baking tray and once all the chicken is done, place into the oven for 15 minutes or until cooked through.
