Blueberry Muffins

1 cup Greek yoghurt
1/4 cup self raising flour
2 cups rolled oats
2 tsp baking powder
2 ripe bananas
2 eggs
1/4 cup honey or maple syrup
1 tsp vanilla
1 punnet of blueberries
Method
- Preheat the oven to 180 degrees Celsius
- Add all ingredients into a food processor or blender and blend for 2 minutes or until smooth (you may need to scrape down the side of the bowl)
- Add the blueberries and stir with a spoon to combine.
- Line a 12 hole muffin tin with cases and fill each one about 3/4 full
- Bake in the oven for 20 minutes or until cooked through. Allow to cool for 5 minutes before eating
