Blueberry Muffins

Ingredients

  • 1 cup Greek yoghurt

  • 1/4 cup self raising flour

  • 2 cups rolled oats

  • 2 tsp baking powder

  • 2 ripe bananas

  • 2 eggs

  • 1/4 cup honey or maple syrup

  • 1 tsp vanilla

  • 1 punnet of blueberries

Method

  • Preheat the oven to 180 degrees Celsius
  • Add all ingredients into a food processor or blender and blend for 2 minutes or until smooth (you may need to scrape down the side of the bowl)
  • Add the blueberries and stir with a spoon to combine.
  • Line a 12 hole muffin tin with cases and fill each one about 3/4 full
  • Bake in the oven for 20 minutes or until cooked through. Allow to cool for 5 minutes before eating
