Fried Rice with Chicken

1 cup (cooked) brown rice (equivalent 70g uncooked)
250g (raw weight) chicken breast
1 tsp extra virgin olive oil
2 cups mixed vegetables (eg. beans, carrot, broccoli)
2 eggs
2 tbsp soy sauce
Method
- Cook the rice according to the packet directions. Alternatively, you could use the ‘quick cook’ microwave brown rice.
- Meanwhile, heat a fry over medium heat. Cook the chicken in 1 tsp olive oil for 5 minutes each side or until golden brown and cooked through. Slice the chicken.
- Cook vegetables in a microwave safe container, with a splash of water for 3 minutes, or until cooked to your liking.
- Crack the eggs into a bowl and whisk to combine. Add to a fry pan and cook until your eggs are scrambled, remove and chop into pieces.
- Combine rice, vegetables, egg, chicken and soy sauce back into the pan to heat through and serve between two bowls.
