- Salad & Tuna
400-500g fresh raw tuna, diced (1-2cm pieces)
~2-4 C soba noodles
1/2 whole pineapple, diced (OR tinned pineapple)
1-2 C edamame
4-6 radishes, sliced
1 cucumber, diced
1 large carrot, grated
1 avocado, sliced
Soy sauce, to dress
- Marinade for tuna
6 spring onions, sliced
1/4 cup coriander
2 tsp grated ginger
3 garlic cloves
1 Tb sesame seeds
4 Tb soy sauce
2 Tb sesame oil
1 Tb honey
Chill flakes if desired
Method
- Cook noodles and edamame according to packet instructions.
- Divide noodles among 4 bowls. Arrange pineapple, edamame, radish, cucumber, carrot and avocado on each.
- Combine all marinade ingredients and mix through diced tuna.
- Divide tuna among 4 bowls.
- Drizzle soy sauce and add extra coriander on top if desired.
