Teriyaki Salmon Nourish Bowl

- For the Teriyaki Salmon
3tbs Teriyaki sauce
3tbs Hoisin sauce
3tbs Soy sauce
1 Tbs white vinegar
1 Tbs vegetable oil
1/3C brown sugar
2tsp minced garlic
2tsp minced ginger
300g diced Salmon
- For the bowl
1 Cup Rice (feel free to use couscous, quinoa or any other grains that you prefer)
1 Avocado
1 Cucumber
1 Cup Cherry tomatoes
100g feta
Few handfuls Spinach
Kewpie mayo
Siracha mayo
Method
- First combine all the teriyaki sauce ingredients into a bowl and stir to combine. Add the salmon and leave to marinade in the fridge for at least 30min*.
- Preheat the oven to 200˚C, and line a square baking tin with baking paper. Then transfer the salmon and extra marinade into the baking dish and cook salmon for 12-16 minutes.
- While the salmon is cooking, you can start preparing all the other ingredients for the nourish bowl. Cook the rice in a rice cooker if available or boil over the stove top. Chop up the avocado, cucumber, cherry tomatoes and feta.
- Place the rice in the bowl and add salmon, avocado, cucumber, cherry tomatoes, feta and spinach into the bowl. Season with salt and pepper and then squeeze some siracha mayo and kewpie mayo over the top of the bowl to finish it off!
Notes
- You can really use any toppings you like to add into the nourish bowl. For example, to turn this into more of a poke bowl style dish, you could add seaweed and edamame beans as well. Or you could use this to use up leftover vegetables in your fridge!
- *If it suits you, feel free to whip this section up in the morning before work, then when you get home there’s one part of the dish that is already ready to go!
