3 Quick and Easy Lunch Ideas

People often struggle to think about what to eat for lunch. We can find ourselves in situations of being time poor, hungry and overthink what is quick and nutritious. It’s important to consider the main components needed to make a balanced meal. Choose a source of protein, add some carbohydrates, and then fill your plate with vegetables or salad. There is no need to set unrealistic expectations, keeping it simple, often works best. 

Cooking and preparing food can be fun when you have the motivation to make something satisfying. Unfortunately, we have moments when life doesn’t go to plan and we need to eat, now! Luckily, the supermarket is filled with convenient options which makes putting a meal together easy.  So, if you need lunch in a hurry? Why not pop to the supermarket, grab a precooked roast chicken and a couple other ingredients to make a super quick, balance meal. 

BBQ Chicken – Top Tips 

– Remove from bag and place on plate 
– Peel off skin from whole chicken 
– Pull meat from bone, shredding the meat as you’re going and place in separate bowl 
– Pour any chicken juices over the shredded meat to keep it moist 

Idea 1 – Chicken, Rice and Vegetables

Ingredients
BBQ Chicken 
Microwave rice 
Frozen vegetables 
Siracha Mayo 

Method
1) Prepare roast chicken following directions above 
2) Microwave rice according to packet instructions
3) Microwave vegetable according to packet instructions
4) In a serving bowl, add rice, vegetables and portion of chicken
5) Drizzle with Siracha mayo and enjoy.

Idea 2 – Chicken Ceasar Wrap 

Ingredients
BBQ Chicken 
Multigrain Wrap
Premade Ceasar Salad Mix  

Method
1) Prepare roast chicken following directions above 
2) Prepare Ceasar Salad Mix according to instructions on pack 
3) Assemble wrap with portion of chicken and 1-2 handfuls of Caesar salad in the middle of the wrap 
4) Fold bottom edge over the top and then roll the wrap tightly, keeping the filling inside. Enjoy.

Idea 3 – Chicken Nachos

Ingredients
BBQ Chicken 
Corn Chips
Cheese
Salsa
Tomato
Cucumber
Avocado 
Sour Cream 

Method
1) Prepare roast chicken following directions above 
2) Preheat grill to medium to high heat 
3) Spread a layer of corn chips onto an oven tray 
4) Spread a portion of chicken over the corn chips, add some dollops of salsa and sprinkle cheese with cheese 
5) Place the oven tray under grill, cook until cheese is melted and golden (about 3-6mins), then remove and set aside 
6) Chop up tomato and cucumber into small dice, sprinkle over cooked nachos
7) Halve an avocado, remove seed and chop into small dice, sprinkle over nachos
8) Spoon a couple small dollops of sour cream over nachos and enjoy.
