1 slice of bread
1 egg
½ an avocado
Black pepper (optional)
1 tsp white wine vinegar (optional)
Method
- Bring a large pot of water to a boil, then reduce to low (or turn off the heat).
- Crack the egg into a small ramekin or bowl.
- Add one tablespoon of white wine vinegar to the pot (optional) and stir to create a vortex.
- Pour the ramekin with the egg into the middle of the vortex and set a timer for 3 minutes.
- Once the egg is done (the white is cooked through) use a slotted spoon to remove the poached egg. Dab with a paper towel to remove excess water and eat immediately.
- Meanwhile, cook your toast and slice your avocado.
- Top your toast with the avocado, poached egg and black pepper (optional).
