1 tbsp olive oil
1 brown onion, diced
2 cloves garlic, minced
500g lean beef mince
1 can black beans (drained and rinsed)
200g refried beans
2 tbsp taco seasoning
2 tbsp tomato paste
3/4 cup water
4 tortillas (more if needed)
Shredded lettuce
Cherry tomatoes, halved
Grated cheese
Sour cream

Method
- Filling
- Heat a fry pan over medium-high heat and add the olive oil. Cook the onion and garlic for 2 minutes before adding the mince. Break up the mince as it cooks and once browned, add in the seasoning. Stir to combine.
- Add the black beans and refried beans to the mince and mix through. Add in the tomato paste and water, stir to combine and simmer on a low heat for 5 minutes until it is a nice thick mixture (you don’t want it too watery but also not too thick – add more water if needed to get a nice consistency).
- Bowls
- Meanwhile, heat the oven to 180° Celsius. Place 4 ramekins upside down on a baking tray and spray with oil. Lay the tortillas over the ramekins and lightly mould them around the ramekins with your hands. Spray the tortillas lightly with oil and heat in the oven for 8 minutes. Once ready, leave to completely cool.
- To assemble the bowls, fill will the mince mixture the add salads and top with cheese and sour cream.
