Strawberry Salad

2 cups cooked quinoa (prepared as per packet instructions)
1 bag baby spinach
1 punnet of strawberries, diced
½ a red onion, diced
½ cup chopped walnuts
1 avocado, sliced and cubed
1 cup fresh basil, torn into pieces
1 block of feta ~200g, cubed
- Dressing
3 Tb balsamic vinegar
3 Tb olive oil
1 tsp Dijon mustard
1 tsp salt
Method
- Prepare and combine all ingredients in a large salad bowl. Make the dressing by combining the ingredients in a small jar and shaking, or mixing well in a bowl.
- Serve and enjoy! This salad goes well with fish, meat or chicken, or add a can or two of chickpeas for a plant-based protein hit.
