Ingredients

  • 2 cups cooked quinoa (prepared as per packet instructions)

  • 1 bag baby spinach

  • 1 punnet of strawberries, diced

  • ½ a red onion, diced

  • ½ cup chopped walnuts

  • 1 avocado, sliced and cubed

  • 1 cup fresh basil, torn into pieces

  • 1 block of feta ~200g, cubed

  • Dressing
  • 3 Tb balsamic vinegar

  • 3 Tb olive oil

  • 1 tsp Dijon mustard

  • 1 tsp salt

Method

  • Prepare and combine all ingredients in a large salad bowl. Make the dressing by combining the ingredients in a small jar and shaking, or mixing well in a bowl.
  • Serve and enjoy! This salad goes well with fish, meat or chicken, or add a can or two of chickpeas for a plant-based protein hit.
