Steak Nachos

1 tbsp extra virgin olive oil
1 brown onion – diced
1 cup sliced mushrooms
500g steak
2 tbsp taco seasoning
Corn chips (about a handful)
Grated cheese
Sour cream (optional)

Lettuce
1 tomato – diced
1/2 cucumber – diced
1/2 avocado – diced
Lime juice
Salt and pepper
1 tsp extra virgin olive oil
Method
- Heat a fry pan over medium heat and add olive oil. Cook onion and mushroom for a few minutes.
- Rub steak all over with taco seasoning then add to the pan, pushing the veges to the sides. Cook for 5 minutes on each side (for medium/well done)
- Meanwhile, mix the tomato, cucumber, avocado together and add a squeeze of lime juice, the olive oil and some salt and pepper. Combine together.
- Once the steak is cooked, transfer to a chopping board and let it rest for a few minutes. Add a little bit of water to the pan and mix the onions and mushroom around, scraping all of the flavour off the bottom of the pan.
- Slice the steak into thin strips.
- Time to put it all together! Add your corn chips to a bowl and top with grated cheese. Microwave or grill until melted. Top with lettuce and salad. Top with steak and the mushroom/onion mix. Add a dollop of sour cream and an extra sprinkle of cheese if you like!
