Nachos Pizza

Note: the chicken is cooked in the slow cooker for 4 or 8 hours.

Ingredients

  • Corn chips

  • 500g chicken thighs

  • 1 jar salsa

  • 1 tbsp olive oil

  • 1 brown onion, sliced

  • 1/2 red capsicum, diced

  • 10 mushrooms, sliced

  • 1/2 cucumber, diced

  • 1/2 punnet cherry tomatoes, cut into quarters

  • 1/2 avocado, cubed

  • Grated cheese

  • Sour cream to serve (optional)

Method

  • Put the chicken thighs and the salsa into the slow cooker and cook on high for 4 hours, or low for 8 hours. Alternatively, diced the chicken and cook in a fry pan and add salsa once cooked.
  • Heat a fry pan over medium heat and add the olive oil. Cook the onion, capsicum and mushroom until soft and starting to char.
  • Meanwhile, place a layer of corn chips on a plate and grate over some cheese. Melt in the microwave or under the grill (this is your pizza base!)
  • Sprinkle over the onion mixture, then top with your salad ingredients.
  • When the chicken is cooked, shred with a fork and place on top of the nachos.
  • Finely grate over some more cheese and top with sour cream, if using.
  • Dig in!
