Ingredients
Corn chips
500g chicken thighs
1 jar salsa
1 tbsp olive oil
1 brown onion, sliced
1/2 red capsicum, diced
10 mushrooms, sliced
1/2 cucumber, diced
1/2 punnet cherry tomatoes, cut into quarters
1/2 avocado, cubed
Grated cheese
Sour cream to serve (optional)
Method
- Put the chicken thighs and the salsa into the slow cooker and cook on high for 4 hours, or low for 8 hours. Alternatively, diced the chicken and cook in a fry pan and add salsa once cooked.
- Heat a fry pan over medium heat and add the olive oil. Cook the onion, capsicum and mushroom until soft and starting to char.
- Meanwhile, place a layer of corn chips on a plate and grate over some cheese. Melt in the microwave or under the grill (this is your pizza base!)
- Sprinkle over the onion mixture, then top with your salad ingredients.
- When the chicken is cooked, shred with a fork and place on top of the nachos.
- Finely grate over some more cheese and top with sour cream, if using.
- Dig in!
