minutesThese mini quiches are perfect for a snack or an on-the-go breakfast. You can make them as the recipe says, you can use a double layer of bread or you can make them without the bread at all.
Ingredients
6 slices of bread, crusts removed
1 small zucchini, grated
30g (1/4 cup) grated cheese
2 rashers short cut bacon, finely chopped
1 tbsp chopped chives
8 eggs, lightly whisked
1 tbsp milk
Salt and Pepper
Method
- Pre-heat the oven to 180°C. Spray a 6 hole muffin tray with oil.
- Place one slice of bread on a clean work surface and roll flat with a rolling pin (until about 0.5cm thick). Repeat with remaining slices of bread.
- Line the muffin tin with the bread and press down firmly. Spray with oil and bake in the one for 15 minutes or until just golden.
- Squeeze any excess moisture out of the grated zucchini before adding it to a bowl with the eggs, cheese, chives, milk and bacon. Stir to combine.
- Divide the mixture evenly between the 6 bread cases and bake for 25 minutes until the egg is just set and lightly golden.
- Allow to cool slightly serving.
