Ingredients

  • 250g (raw weight) lean beef mince

  • 1 tsp extra virgin olive oil

  • 1 cup salsa

  • 4 cups of salad

  • ½ cup corn kernels

  • 40g grated tasty or cheddar cheese

  • 100g avocado

Method

  • Heat a fry pan over medium heat. Cook beef mince with 1 tsp olive oil until browned. Stir through the salsa.
  • Serve the salad, corn and beef between two bowls and top with avocado and cheese.
