1 punnet roma tomatoes
2-3 colourful capsicums
100-150g olives
1 Lebanese cucumber
1 can drained chickpeas
1/2 red onion
125g feta
Optional: avocado
- Dressing
2 Tb olive oil
1/2 lemon
1 clove garlic
1 Tb oregano
Method
- Chop tomatoes, capsicums, cucumbers, olives and onion. Combine together in a bowl.
- Add chickpeas and sprinkle with feta.
- Combine dressing in a small bowl and drizzle over salad.
- Toss together and enjoy!
