Loaded Greek Salad

Ingredients

  • 1 punnet roma tomatoes

  • 2-3 colourful capsicums

  • 100-150g olives

  • 1 Lebanese cucumber

  • 1 can drained chickpeas

  • 1/2 red onion

  • 125g feta

  • Optional: avocado

  • Dressing
  • 2 Tb olive oil

  • 1/2 lemon

  • 1 clove garlic

  • 1 Tb oregano

Method

  • Chop tomatoes, capsicums, cucumbers, olives and onion. Combine together in a bowl.
  • Add chickpeas and sprinkle with feta.
  • Combine dressing in a small bowl and drizzle over salad.
  • Toss together and enjoy!
