Ingredients

  • 500g chicken breast, diced

  • 1 brown onion, diced

  • 1 clove garlic (1 tsp minced)

  • 8 cups mixed vegetables

  • 2 cup (cooked) Basmati rice (equivalent to 140g uncooked)

  • 1 tbsp extra virgin olive oil

  • 1 tbsp soy sauce

  • 1 tbsp sweet chilli sauce

  • 1 tbsp honey

Method

  • Heat a fry pan over medium heat. Cook the chicken in half the olive oil for 5 minutes until golden brown and cooked through. Set aside.
  • Next, cook the onion and garlic in the remaining oil until fragrant. Add the rest of the vegetables and cook for 5 minutes or until tender.
  • Add the chicken back into the pan to heat through. Add soy sauce, sweet chilli sauce and honey and stir to combine.
  • Serve between 4 bowls over rice.
