Banana and Oat Cookies

1 ripe banana
1/2 cup coconut
3/4 rolled oats
1/2 cup choc chips
1 heaped tablespoon peanut butter
Method
- Preheat the oven to 180C and line a baking tray with baking paper.
- Mash the banana in a bowl until smooth.
- Add in the oats, coconut and choc chips and stir to combine.
- Heat the peanut butter in the microwave for about 30 seconds, then add to the other ingredients and mix well.
- Roll 1 tablespoon of mixture into balls and spread evenly on the lined baking tray. Press down slightly to flatten.
- Bake in the oven for 15-18 minutes are until the cookies are golden brown.
