Ingredients

  • 500g turkey mince

  • 400g tin of 4 bean mix, drained and rinsed

  • 1/2 packet of taco seasoning

  • 2 bags microwave brown rice (4 serves)

  • 250g baby spinach

  • 1 punnet cherry tomatoes

  • 400g tin corn kernels

  • 1/2 bunch coriander

  • 1 tbsp Extra virgin olive oil

Method

  • Heat a fry pan over medium heat and add the oil. Add the mince and cook until brown. Add the beans and taco seasoning and stir to combine. Take off the heat and allow to cool slightly.
  • Heat the rice in the microwave according to packet directions. If making this recipe for meal prep, do not heat the rice until serving.
  • Add the rice and beans to a bowl and add the baby spinach, corn and tomatoes. Sprinkle with coriander and dig in!
