Mexican Salad

250g (raw weight) lean beef mince
1 tsp extra virgin olive oil
1 cup salsa
4 cups of salad
½ cup corn kernels
40g grated tasty or cheddar cheese
100g avocado
Method
- Heat a fry pan over medium heat. Cook beef mince with 1 tsp olive oil until browned. Stir through the salsa.
- Serve the salad, corn and beef between two bowls and top with avocado and cheese.
