Ingredients

  • 1 slice of bread

  • 1 egg

  • ½ an avocado

  • Black pepper (optional)

  • 1 tsp white wine vinegar (optional)

Method

  • Bring a large pot of water to a boil, then reduce to low (or turn off the heat).
  • Crack the egg into a small ramekin or bowl.
  • Add one tablespoon of white wine vinegar to the pot (optional) and stir to create a vortex.
  • Pour the ramekin with the egg into the middle of the vortex and set a timer for 3 minutes.
  • Once the egg is done (the white is cooked through) use a slotted spoon to remove the poached egg. Dab with a paper towel to remove excess water and eat immediately.
  • Meanwhile, cook your toast and slice your avocado.
  • Top your toast with the avocado, poached egg and black pepper (optional).
